Cooking Schools
The inclusion of a cooking school element within the building is to keep this idea of educating people about food included within the concept. After looking into allergies and the idea of social eating the consideration of including a cooking school to teach people how to make quick and easy meals for themselves came about to educate people. The idea of creating this space would allow for people to come and take courses within the restaurant giving it a multi functional purpose. It will be a small cooking school space to provide all the necessary equipment for 8 to 10 people at a time. This space should also include space for the customers to relax in and also taste the food and to relax and take a break and enjoy the space. In order to design this space I began by looking at some example of cooking school spaces.
Una's Kitchen Bakery, Nordic Bros
Una's Kitchen by Nordic Bros is a cooking school space in Seoul. It is a baking studio space that has been created by South Korean architects - Nordic Bros. The space developed is a space for the owner- Una (hence the name!) to teach classes and also act as a studio for her work. The architects have used double layers of polycarbonate fixed to black frames to create a monochrome appearance that create the spaces within the studio whilst allowing light to penetrate the space.
It is the use of plastic within this design which is why it was considered as a project design precedent. This use of plastic allows light to be filter through the space to create a soft light within the space whilst also showing movement within space without defining the space function. The plastic also create separate areas within the space to divide function. This use of plastic is a material that should be considered for use within the space. The way in which the light is filtered create a soft and appealing space for the cooking school.

Cooking School in Ancient Slaughterhouse, Sol89
This design example looks at a cooking school which has been created with a 19th century slaughterhouse in Spain. The school has been developed with a town called Medina located within the hills of Cadiz - an area which is know for its traditional whitewashed architecture and ceramic tiled roofs. The old slaughterhouse space was composed of a small existing space built around a courtyard area surround by the high white washed wall which created many limitations within the project due to the intensions of retaining these original aspects. Adapting a space within an area such of these means that the existing space are the boundaries and therefore the site is limited by these walls. There is an interesting contrast within the space of the brick and stone columns contrast with the empty space within the building.
The development of the cooking school uses the concept of the ceramic roof to take its design language and create the internal spaces. The new ceramic roof interrupts the traditional methods of construction and the building along with the white washed walls. Although the roof has been developed in a modern way there is a nod to this historic area to ensure that the design fits in with the existing architecture. Small courtyards are created within the space and are filled with herbs and plants that can be used by students within the cooking in the school. The buildings existing floors were replaced with concrete floors and a wooden formwork which again use the traditional ways in doing this. The walls within the spaces have been covered with white and rough lime mortar which looks at the buildings industrial history to maintain the aspect of history within the site.
It is the retention of the historical elements of the this site which make this such an interesting project. The use of modern materials with traditional construction methods used create the new cooking school space within the old slaughterhouse. The way in which the modern aspect of the design is subtable and blends in with its surroundings to complement them without losing its appearance as a new piece of architecture. The use of modern forms that have been massed next to the interesting structure create interesting building lines on the elevations. The combination of the traditional white washed walls and red ceramic tiles alongside the new concrete interior is a material combination that works well within this space.

Nick Nairn Cook School
The Nick Nairn cook school which was set up in 2000 by the famous chef Nick Nairn. Nairn's aim when he developed the cooking school idea was to create a space in which people could come and learn skills that would allow them to take raw and fresh ingredients and turn them into homemade food. The school began with classes that took just three or four people but now it has developed into a cooking school with two different locations. Looking at the design of both schools there are interesting design features within both - one is a purpose built facility and the other the renovation of an interior space.
Looking at these space illustrated how the cooking school could be developed into both a functional as well as beautiful piece of the architecture. Looking at the school which has been developed within the existing building uses all the existing features such as the windows and the height of the space to create a learning environment. It was also key - as it is within all design precedents to look at how the space was laid out and how it works.

In doing this it allows people within the space on the course to see what the instructor is doing and allows them to follow their cooking techniques in order to develop their own skills. This is concept that I would like use within the cooking school aspect of the concept. I feel with the space available at the Short Hill site this method would work well also due tot he length of the building. Using all the space is key and therefore using a mirrored aspect would allow the chef to interact with all customers within the room rather than just those within the front space.

The Foodworks Cookery School
This project was looked at as a design precedent as unlike other examples looked at through research the Foodworks Cookery School is a purpose built space.
It was decided to look at this space as it was a large open plan like the cooking school space that would want to be created within the Short Hill building. The way in which the space is lit and also how it is spread over two levels creates an interesting educating space. It was also a good example to look at how the space has been used and laid out with the workbenches to help determine a layout within the cooking school space.

Daylesford Organic Cookery School
The Daylesford cookery school is located in Gloucestershire. The site is home to a market garden, bakery, creamery, animals all alongside the cooking school space. The site is located within a working farm environment and aims to work to create a fresh and homemade approach to food and eating. The cookery school on the site has been created within and old cotswold stone barn, again looking at this idea of creating new spaces within old buildings. Using produce from the farm the cookery school ethos allows for cooks of all levels to attend and learn. This idea of creating a space that uses local ingredients and local produce is although not an architectural or design aspect of the concept but it is a thought that should be considered within design trying to complete a sustainable space the gives back to the local environment and community. This idea of using a local aspect within the design is a concept that can be applied to the Short Hill site to retain the sites history and heritage.
The use of the brick alongside white and clean lined spaces is an aspect of this project that is interesting. This idea of contrast between the new and old within the space creates a range of interesting spaces and textures - something which can be taken away from this research for use within the concept development.
