Scent is the closet thing linked to a memory...
The sense of smell can determine our opinion about a place within seconds of being there. An off putting smell can make people want to leave a space and this memory stays with them. Scents such as bad food, cooking, smoking, sewerage are all off putting scents - and within a restaurant space even more so. The idea of using a scent within the entrance to the building works to remove these smells and creating a welcoming and impacting environment from the moment the customer arrives. Due to the sites location this scent would also be smelt from the street and therefore attracting more people into the space bringing in this idea of spontaneous dining.
Lavender is the scent that would be used within the entrance to the restaurant to create this instant hint of fragrance within the space. The bright purple colourings of the plant alongside the clear, white rodeca plastic will provide and interesting contrast within the space. Lavender is a relaxing scent which fills the air with its aromatic scent which has been used for medicinal and healing methods over hundreds of years. The scent is said to be relaxing and ease troubled minds. The scent is subtle scent and therefore will provide just the right amount of scent within the space without it becoming over powering.
The idea of doing this works to instantly create memories with the customer, entering the space in an unexpected way to be greeted by the unexpected scent of lavender will create a memorable experience. Taking away the scent of food and the noise from the surrounding area will mean that when the customer enters the building from the tunnel this instant hit of noise and restaurant smells will have a greater impact.

Visual of the entrance space showing how the lavender will be used to line the rodeca plastic structure giving of the smell of lavender rather than the expected smell of food that you would usually get when entering a restaurant space. This idea of using the sense is used from the beginning and the concept of unexpected used through taking away the usual factors of a restaurant - in this case the smell.
Abercrombie and Fitch
There is no denying the impact of the perfumed filled air within Abercrombie and Fitch stores. The smell hits you as soon as you enter the space and clings to your clothes so the teenage smell does not leave all day - leaving its mark of your visit to the store. It is said that our sense is our most emotional sense and therefore targeting this can convince us to make a purchase and keep visiting a shop. Researching the impact of scents on retail Abercrombie seemed like a distinctive space that uses scent within its architecture. Although the use of scent would not be used within the way Abercrombie and Fitch use smells within their buildings to trigger purchases the idea of creating a memory of an experience remains the same along with the idea of mystery and intrigue. Whilst researching the scent within the Abercrombie stores I came across ScentAir a company which specialises in providing scents for companies to use within space as a marketing technique.
ScentAir
ScentAir is a company who work to develop smells for companies to use within spaces to market and enhance experiences. Using the companies brand and wants they develop a smell that creates the desired atmosphere - such as calming, relaxing, invigorating etc. By doing this the scent works to enhance experiences. ScentAir have developed scents for Universal in Orlando, The Hard Rock Hotel, Hilton Hotels and many more. They say how our sense of smell is our closet sense to creating memories and smell trigger these - the smell of freshly cut grass in summer, cinnamon at Christmas time etc. The use of scents within the restaurant space aims to do this - the smell of lavender bring back memories and the time spent in the building creating a relationship between the building space and the customer.
"Experiences matter. Our sense of smell is the strongest way to add more to the customer experience. Because of our people and our commitment to this idea, you can trust ScentAir to get it right and to add more for your customers"
The scents used by ScentAir are bottled and blown around spaces through fans to create the desired atmosphere. With the entrance space this is a technique that could be used to hide the lavender and have the essence blown around the space. This creates more of an unexpected environment - seeing the lavender would create and interesting visual but just the scent would work to create this sense of question and the unexpected.

The ScentAir website - a very clever concept and website, I recommend a visit.
